  1. Place cucumbers and onion (and jalapeño, if using) into a medium-sized bowl. Stir together to combine.
  2. Sprinkle ranch packet over cucumber and onion mixture, then drizzle with rice vinegar.
  3. Stir gently until everything is fully coated. Cover salad and chill for at least 1 hour before serving.
  4. Enjoy as a side dish or dip for crackers, chips, or bread. Leftovers stay fresh covered tightly in the refrigerator up to 4 days.

Notes
