Preparation
  1. In a large bowl, add the chopped avocado and immediately squeeze the lemon juice over it. Toss to coat the pieces and prevent it from browning.
  2. Incorporate the diced red bell pepper, chopped parsley or cilantro, diced red onion, chopped cherry or plum tomatoes, and drained white beans.
  3. Gently toss all the ingredients together to combine evenly. Taste, then adjust seasoning with sea salt and dried chili flakes as desired.
  4. Serve it as a salad or scoop it with chips and enjoy! It stays well in the fridge for up to two days.
