Method
 

Preparation
  1. Gather all your ingredients and kitchen tools.
  2. Grate the carrots using the large holes of a grater until you have a heaping amount.
  3. Chop the fresh parsley finely.
  4. Measure out the sunflower seeds and raisins.
Cooking/Assembling
  1. In a large mixing bowl, combine the grated carrots, raisins, sunflower seeds, and chopped parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the carrot mixture and toss well until everything is evenly coated.
