Base Ingredients
  • 2 cups quick or rolled oats Provide a healthy base and a chewy texture.
  • 1 cup raw walnuts Add crunch and nutty flavor, along with healthy fats.
  • 1/2 teaspoon sea salt Enhances the overall flavor profile.
  • 1/4 cup vegan butter Creates a rich texture in the crust while keeping it plant-based.
  • 1/2 cup applesauce Serves as a moisture ingredient and a natural sweetener.
  • 1/4 cup maple syrup Adds sweetness and a hint of caramel flavor.
  • 1 teaspoon cinnamon Introduces warmth and depth.
Filling Ingredients
  • 2 cups strawberries Fresh and juicy, provides the main fruity flavor.
  • 2 tablespoons cane sugar A touch of sweetness to balance the tartness of the strawberries.
  • 1 tablespoon lemon juice Brightens the flavor of the filling.
  • 2 tablespoons arrowroot starch Acts as a thickener for the filling.
  • 1 teaspoon lemon zest Optional, adds a citrusy fragrance.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F and prepare an 8x8 inch baking tin with parchment paper.
  2. Pulse the oats and walnuts in a food processor until the walnuts are broken down.
  3. Add remaining crust or topping ingredients and blend until combined.
  4. Scoop all but 1/2 cup of dough into the tin and pack it down.
  5. Bake the crust for 10 minutes.
Cooking
  1. In the meantime, slice strawberries and mix with filling ingredients.
  2. Remove crust from the oven and increase temperature to 375 degrees F.
  3. Spoon strawberries over the crust and sprinkle remaining dough on top.
  4. Bake for 20 to 25 minutes until bubbly and brown.
Serving
  1. Allow to cool for 20 minutes before slicing into 9 bars.

Notes

These bars are perfect for meal prep and can be stored in an airtight container in the fridge for about a week. They can also be frozen for up to three months.
