Method
 

Preparation
  1. Combine the rice, water, and salt in a medium saucepan. Bring to a boil, then reduce heat to low and simmer with the lid on for 10 minutes.
Cooking
  1. Remove the lid and stir in the vegan butter. Gradually add the soy milk, 1/2 cup at a time, stirring until combined. Add the lemon zest.
  2. Increase heat to medium and bring to just below boiling. Cover and simmer for another 5 minutes.
  3. Stir in the sugar and vanilla extract, then cover and simmer for another 2-5 minutes until the rice is tender.
  4. Prepare the starch slurry by whisking the starch and turmeric in a small dish, then add 2 tablespoons soy milk to form a smooth mixture.
  5. Slowly add the slurry to the rice mixture, stirring continuously.
  6. Bring the mixture back to a boil, then reduce to a simmer, stirring, and let thicken for 2-3 minutes.
Serving
  1. Spread the rice onto serving plates about 1 1/2 inches thick.
  2. Cool on the counter for about 1 hour before serving.
  3. Sprinkle cinnamon on top before serving. Store in the fridge and serve cold or reheat if desired.

Notes

For best results, rinse the rice beforehand. Adjust sugar levels to your taste and consider different toppings like nutmeg or coconut for variety.
