Preparation
- Preheat the oven to 350 degrees F.
- Butter and flour a loaf pan or use vegan butter.
- In a large bowl, mash the bananas thoroughly.
Cooking
- Add oil or applesauce, cane sugar, cinnamon, vanilla extract, and plant milk to the bananas and whisk together.
- Add salt, baking powder, and baking soda, stirring lightly to combine.
- Gently fold in both flours until no flour is visible.
- If desired, gently incorporate walnuts or chocolate chips.
- Pour batter into the prepared loaf pan, topping with extra walnuts or chocolate chips and a sprinkle of sugar and cinnamon if desired.
- Bake for 45 minutes or until golden and a toothpick comes out clean.
Serving
- Let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container for up to 3 days or freeze for longer storage.
Notes
For the best flavor, use truly overripe bananas. Measure the flour correctly to avoid dense bread. Avoid overmixing the batter.
