Ingredients
  

For the Salmon
  • 4 pieces salmon fillets The star of the dish, providing protein and healthy fats.
  • 2 tbsp olive oil Adds richness and helps achieve a crispy salmon exterior.
  • 1 tsp kosher salt Enhances flavor and helps to season the salmon properly.
  • 1/2 tsp freshly cracked black pepper Offers a touch of heat and depth to the dish.
For the Sauce
  • 4 tbsp butter Creates a rich, creamy sauce and adds a luxurious texture.
  • 3 cloves garlic Infuses the dish with aromatic flavor.
  • 1 cup cherry tomatoes Adds a burst of sweetness and acidity.
  • 2 cups fresh baby spinach Incorporates a healthy green element to the dish.
  • 1/2 cup heavy cream Delivers a smooth, indulgent sauce.
  • 1/2 cup freshly grated Parmesan cheese Adds a salty, nutty note.
  • 2 tbsp chopped fresh parsley and/or basil Introduces a fresh herby touch.
  • 2 wedges lemon For serving, adds a refreshing citrus note.

Method
 

Cooking Salmon
  1. Heat the oil in a large nonstick skillet over medium high heat.
  2. Season salmon all over with salt and pepper.
  3. When oil is shimmering but not smoking, add salmon skin side UP and cook until the flesh is deeply golden, about 5 minutes.
  4. Flip over and cook 2 minutes more.
  5. Transfer to a plate.
Preparing the Sauce
  1. Reduce heat to medium and add butter.
  2. When butter has melted, stir in garlic and cook until fragrant, about 20 seconds.
  3. Add cherry tomatoes and season with salt and pepper.
  4. Cook until tomatoes are beginning to burst, then add spinach and cook until just wilted.
  5. Stir in heavy cream, Parmesan, and parsley (and or basil) and bring mixture to a simmer.
  6. Adjust heat so it is just a gentle bubble and cook until sauce is slightly reduced, about 3 minutes.
  7. Return salmon back to skillet and spoon over sauce.
  8. Simmer until salmon is cooked through, about 2 to 3 minutes more.
Serving
  1. Garnish with more herbs and squeeze lemon on top before serving.

Notes

For best results, use fresh ingredients and do not overcook the salmon. You can substitute heavy cream with Greek yogurt or adjust spices to your taste.
