Preparation
- Preheat the oven to 375°F.
- Grease a 9×13-inch baking dish.
Cooking Noodles
- Boil egg noodles in water until al dente, then drain well.
- Thaw mixed frozen veggies and slice baby Bella mushrooms.
Sautéing Vegetables
- In a skillet, heat olive oil and sauté diced onion and minced garlic for about one minute.
- Add sliced mushrooms and spices; cook until softened.
Combining Ingredients
- In a large bowl, combine cooked pasta, shredded turkey, soups, sour cream, Pepper Jack cheese, thawed veggies, and sautéed mixture.
Assembly
- Spread the mixture into the greased baking dish.
- Mix cracker crumbs with melted butter and sprinkle evenly over the top.
- Top with additional grated Pepper Jack cheese.
Baking
- Bake for 30-40 minutes until bubbly and golden brown.
Notes
Can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Leftovers can be kept for up to four days in an airtight container.
