Preparation
- Heat the extra-virgin olive oil in a Dutch oven or large soup pot over medium heat.
- Add garlic, onions, bell peppers, carrots, celery, and optional sweet potato. Sauté for 5 to 7 minutes until soft.
Cooking
- Stir in ground turkey and cook until browned, about 5 to 7 minutes.
- Mix in water, tomato sauce, diced tomatoes, chili powder, cumin, paprika, cayenne pepper, kosher salt, black pepper, and red pepper flakes.
- Bring to a boil, then reduce to a moderate bubble.
- Simmer uncovered for about 45 minutes, stirring occasionally until thickened.
- If too thick, add more water to achieve the desired consistency.
- Taste for seasoning adjustment and serve hot with your choice of toppings.
Notes
Storing leftovers in airtight containers can keep the chili fresh for up to five days in the fridge, or freeze in portioned containers for up to three months. Reheat on the stove, adding a splash of water if needed.
