Ingredients

For the Fries
  • 4 medium russet potatoes Can substitute with Yukon Gold for creamier fries.
  • 1 quart vegetable oil Used for frying.
  • 2 tablespoons truffle oil Infuses flavor; adjust to taste.
  • 1/4 cup vegan Parmesan cheese Adds a savory, cheesy finish.
  • 1/4 cup fresh parsley For garnish.
  • 1 teaspoon sea salt Enhances overall flavors.
  • 1/2 teaspoon black pepper Provides a hint of spice.
For the Dipping Sauce
  • 1 cup truffle aioli Made from vegan mayo, truffle oil, and lemon juice.
  • optional Extra Parmesan For garnish.
  • more tsp chopped parsley Final touch for freshness.

Method

Preparation
  1. Wash and peel the potatoes. Start by removing the skin to achieve a smooth bite.
  2. Cut into thin fries, aiming for uniform pieces about ¼-inch thick.
  3. Soak the fries in a bowl of cold water for at least 30 minutes to remove excess starch.
  4. Drain and pat the fries dry with a clean kitchen towel to minimize oil splatter.
Cooking
  1. Choose your cooking method: deep-fry for a classic crispy texture or bake for a healthier option.
  2. If frying, heat the vegetable oil in a frying pan over medium-high heat. Fry the potatoes in batches until golden and crispy.
  3. If baking, preheat the oven to 425°F (220°C) and spread the potatoes on a baking sheet. Bake for about 25-30 minutes until crispy.
  4. Once cooked, toss fries with truffle oil, sea salt, black pepper, and vegan Parmesan cheese.

Notes

For optimal flavor and texture, use high-quality truffle oil and serve fries immediately for the best crunch.
