Method
 

Preparation
  1. Combine spaghetti, tinned tomatoes, sliced onion, sliced garlic, olive oil, pesto, salt, pepper, and vegetable stock in a large saucepan.
  2. Cover and bring the mixture to medium heat.
Cooking
  1. Cook for about 10 minutes, stirring occasionally, until the pasta is almost cooked.
  2. Stir in cherry tomatoes and cook for a further 3 to 4 minutes until the pasta is fully cooked and the cherry tomatoes are softened.
Serving
  1. Serve hot, garnished with grated parmesan cheese on top.

Notes

This dish can be made ahead of time and stored in the refrigerator for up to three days. It also holds up well for meal prep and can be frozen for later use.
