  • 1 clove garlic, minced For depth of flavor.
  • 1 teaspoon lemon zest Brightens the filling.
  • 1 large egg, beaten For egg wash, gives golden color.

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. Arrange sliced tomatoes on a parchment-lined baking sheet, sprinkle with flake salt, and allow to sit for 10 minutes. Pat them dry with paper towels.
  3. Gently roll the pie crust into a 12-inch circle and place it on another parchment-lined baking sheet.
  4. In a bowl, combine honey goat cheese, chopped chives, lemon thyme, minced garlic, and lemon zest. Spread this mixture over the dough, leaving a 1-inch border.
  5. Arrange the tomatoes on top of the cheese mixture and fold the edges of the crust over the filling.
  6. Use a brush to apply the beaten egg over the crust and sprinkle a little more salt.
Baking
  1. Bake the galette for 30-40 minutes, until the crust is golden brown and the tomatoes are tender.
  2. Let it cool slightly, then garnish with fresh basil before serving.

Notes

For maximum flavor, choose ripe heirloom tomatoes and ensure they are patted dry after salting. This galette can be served warm or at room temperature and is versatile enough to be an appetizer, main course, or light lunch.
