Preparation
- Preheat the oven to 375°F.
- Arrange sliced tomatoes on a parchment-lined baking sheet, sprinkle with flake salt, and allow to sit for 10 minutes. Pat them dry with paper towels.
- Gently roll the pie crust into a 12-inch circle and place it on another parchment-lined baking sheet.
- In a bowl, combine honey goat cheese, chopped chives, lemon thyme, minced garlic, and lemon zest. Spread this mixture over the dough, leaving a 1-inch border.
- Arrange the tomatoes on top of the cheese mixture and fold the edges of the crust over the filling.
- Use a brush to apply the beaten egg over the crust and sprinkle a little more salt.
Baking
- Bake the galette for 30-40 minutes, until the crust is golden brown and the tomatoes are tender.
- Let it cool slightly, then garnish with fresh basil before serving.
