Preparation
- Preheat the oven to 400°F (200°C).
- Crumble the tofu into a large bowl until it's the size of rice grains.
- Add the onion, breadcrumbs, tomato paste, soy sauce, nutritional yeast, salt, pepper, and garlic powder into the bowl. Mix until well blended.
- Roll the mixture into golf ball-sized meatballs, about 15 total.
Cooking
- In a large nonstick skillet, heat olive oil over medium-high heat.
- Sear the meatballs for about 10 minutes, turning occasionally until browned on multiple sides.
- Transfer the meatballs to a baking sheet and bake for 15 minutes until firm and cooked through.
Serving
- Prepare the optional sauce by whisking cornstarch and water to create a slurry.
- In a saucepan, add the remaining sauce ingredients, bring to a simmer, then stir in the slurry. Cook for 2-3 minutes, until thickened.
Notes
Tofu Meatballs can be refrigerated for up to a week and are freezer-friendly for up to three months. Serve with fresh herbs or on top of salads for added flavor.
