For the Dressing

  • 3 tbl fresh lime juice Balances sweetness with acidity.
  • 1 inch freshly grated ginger Adds warmth and spice.
  • 2 tbl soy sauce or fish sauce Provides umami depth.
  • 1 tbl maple syrup Optional for added sweetness.
  • 1/4 tsp crushed red pepper flakes Optional for heat.

Method
 

Preparation
  1. In a small bowl, whisk together all the dressing ingredients. Taste and adjust lime, soy sauce, or maple syrup based on preference. Set aside.
Combine Salad
  1. In a large bowl, mix the diced mango, cucumber, red bell pepper, carrot, cilantro, Thai basil, and peanuts. Save a few peanuts for garnish.
Toss with Dressing
  1. Pour the dressing over the salad and toss until everything is evenly coated.
Serve
  1. Transfer to a serving plate and top with extra peanuts, a fresh squeeze of lime, and Thai basil leaves.

Notes

For the best flavor, use firmer mangoes and adjust the lime juice based on the sweetness of the fruit. You can also customize this salad with grilled chicken or avocados for a heartier meal.
