Preparation
- Preheat the oven to 350°F (175°C).
- Line a 9x13 inch cake pan with parchment paper and spray with cooking spray.
- In a saucepan over low heat, melt 1 cup of unsalted butter.
- Stir in 2 1/2 cups of granulated sugar until smooth, then cool for 5 minutes.
- Mix in 2 tablespoons of canola oil and 1 tablespoon of vanilla extract.
- Beat in 5 large eggs one at a time until fully incorporated.
- Sift together 1 cup of all-purpose flour, 3/4 cup plus 1 tablespoon of cocoa powder, and 3/4 teaspoon of salt into the batter.
- Gently fold in 1/2 cup of mini chocolate chips.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 27 to 30 minutes, or until a toothpick inserted in the center comes out clean.
Icing
- In a separate saucepan, melt 2/3 cup of salted butter over low heat.
- Whisk in 2 1/2 cups of powdered sugar, 1/4 cup cocoa powder, 3 ounces whole milk, and 1 teaspoon vanilla extract.
- Stir in 3/4 cup pecan chips or pieces.
- Pour the warm icing over the freshly baked brownies.
Serving
- Allow the brownies to cool completely before slicing into squares.
Notes
Store leftovers in an airtight container at room temperature for up to three days. These brownies can be baked ahead and stored for meal prep.
