Method
 

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a 9×13-inch baking dish with non-stick cooking spray.
  3. Peel and slice the sweet onions into ¼-inch thick slices and separate the rings into a large bowl.
  4. Sprinkle the onions with garlic powder, Italian seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Gently toss to combine.
Cooking
  1. Place the seasoned onions in the prepared baking dish, topping with small pieces of butter.
  2. Evenly layer the shredded cheddar, mozzarella, and Parmesan cheese over the onions.
  3. Cover the pan with foil and bake for 30 minutes.
  4. Remove the foil and bake for another 30 minutes, until the cheese is golden and bubbly.

Notes

For best results, sauté the onions in a skillet with butter before baking, and feel free to experiment with different cheese varieties or add extras like cooked bacon or sautéed mushrooms.
