Main Ingredients
  • 1 can garbanzo beans or chickpeas Provides a creamy base and is high in protein.
  • 1 cup dill pickles, chopped Adds a crunchy texture and tangy flavor.
  • 2 tablespoons pickle juice/brine Enhances flavor and helps achieve the right dip consistency.
  • 2 cloves fresh garlic, minced Introduces a robust aroma and depth of flavor.
  • 1 tablespoon fresh dill, chopped Offers freshness and herbal notes that brighten the dish.
  • 2 tablespoons tahini or sesame paste Contributes creaminess and a nutty flavor.
  • 1 tablespoon fresh lemon juice Adds acidity and balances the richness of tahini.
  • 1 teaspoon ground coriander seed Delivers a warm, earthy flavor.
  • 1 teaspoon sea salt Enhances all the flavors and balances the dip.

Method

Preparation
  1. Place all of your hummus ingredients into a high-speed blender.
  2. Blend your mixture until it reaches a creamy consistency.
  3. Add additional pickle juice or water to thin the dip to your desired consistency, if needed.
  4. The hummus will be a bit chunky, which makes it perfect to be served with crunchy veggies.
  5. Store in an airtight container in the fridge for about 2 days.

Notes

To enhance your hummus, consider adding a splash more pickle juice for extra tang or serving it with a drizzle of olive oil. Let the hummus chill in the fridge for an hour before serving for even better flavor.
