Preparation
  1. In a small bowl, combine the tahini, fresh lemon juice, olive oil, maple syrup, and kosher salt, then whisk to combine.
  2. Add 2 tablespoons of water and whisk until a light and creamy dressing forms.
  3. Depending on the consistency of your tahini, add a little more water as necessary until the sauce is smooth and creamy.
  4. Serve immediately or refrigerate and bring to room temperature before serving. Extra dressing keeps for about 1 month in a sealed container in the refrigerator.

Notes

For added depth, consider toasting the tahini lightly before using it. Experiment with different citrus juices like lime for a unique twist. Store the sauce in a vacuum-sealed container to extend freshness.
