Preparation
- Preheat your oven to 400°F and bake sweet potatoes for 45 minutes or until easily pierced with a fork.
- Allow them to cool, then peel and mash well.
Dough Preparation
- In a large bowl, combine your sweet potato puree with gluten-free oat flour and sea salt.
- Use your hands to knead the dough until well incorporated. If the dough is too wet, add an extra tablespoon of oat flour.
- Allow the dough to rest for 5 minutes.
Cooking
- Transfer the dough to a clean working surface, roll it into a log, and slice evenly into 20 pieces.
- Take one piece, sprinkle with a tiny bit of oat flour, then roll it into a tortilla.
- Heat a large skillet to medium heat and spritz lightly with avocado oil or ghee.
- Cook the tortilla in the skillet for 1-2 minutes per side, until brown spots form.
- Continue with the remaining tortillas.
- Keep your cooked tortillas stacked and covered with a clean kitchen towel until ready to serve.
Notes
For extra flavor, consider adding herbs or spices to the dough, such as cumin or garlic powder. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
