Preparation
- Preheat your oven to 400°F and bake a sweet potato for about 45 minutes. Allow it to cool, then remove and discard the peel.
- Use a food processor or high-speed blender to puree the sweet potato until smooth.
- In a mixing bowl, whisk the sweet potato puree with the eggs, milk, melted ghee, and vanilla extract until well-combined.
- Stir in the oat flour, baking powder, cinnamon, and nutmeg until the batter comes together.
- Gently fold in the chopped pecans or walnuts into the batter and set aside.
Cooking
- Preheat the waffle maker and lightly spritz with oil of your choice before pouring batter.
- Pour about 1/4 cup of batter per waffle, cooking until golden and crisp, around 5-6 minutes.
Serving
- Top with bananas, extra pecans, and a drizzle of raw honey or maple syrup before serving.
Notes
For best results, allow sweet potato to cool completely before pureeing. Mix gently to avoid tough waffles. Can be adapted with various toppings or swapped with pumpkin puree for variations.
