Preparation

- Place salmon fillets in the center of each foil sheet.
- Surround the salmon with chopped zucchini, bell peppers, cherry tomatoes, and red onion.
- Drizzle olive oil over the salmon and vegetables, then season with salt, pepper, and herbs.
- Fold the foil over the salmon and vegetables to create a sealed packet.
Cooking
- Place the foil packets on the grill or in the oven and cook for 15-20 minutes or until the salmon flakes easily with a fork.
- Carefully open the packets (watch for steam) and serve immediately.
Notes
Choose wild-caught salmon for better flavor. Prep ingredients in advance for quicker cooking. Avoid watery vegetables to prevent sogginess.
