Method
 

Preparation
  1. Preheat your grill or oven to 375°F (190°C).
  2. Prepare large pieces of aluminum foil to wrap the salmon and veggies tightly.
  3. Place salmon fillets in the center of each foil sheet.
  4. Surround the salmon with chopped zucchini, bell peppers, cherry tomatoes, and red onion.
  5. Drizzle olive oil over the salmon and vegetables, then season with salt, pepper, and herbs.
  6. Fold the foil over the salmon and vegetables to create a sealed packet.
Cooking
  1. Place the foil packets on the grill or in the oven and cook for 15-20 minutes or until the salmon flakes easily with a fork.
  2. Carefully open the packets (watch for steam) and serve immediately.

Notes

Choose wild-caught salmon for better flavor. Prep ingredients in advance for quicker cooking. Avoid watery vegetables to prevent sogginess.
