Preparation
- Preheat your oven to 350 degrees F.
- Line an 8x11 inch baking pan with parchment paper.
- In a mixing bowl, combine all shortbread crust ingredients thoroughly.
- If needed, add a few drops of almond milk or water to adjust the consistency.
- Firmly press the crust mixture into the bottom of your prepared pan.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool for about 5 minutes.
- Evenly spread your chia seed strawberry jam on top of the cooled crust.
Cooking
- In another mixing bowl, combine all crumb topping ingredients using a silicone spatula.
- Evenly distribute the crumb mixture over the strawberry jam filling.
- Add fresh raspberries on top as desired.
- Place the pan in the oven and bake for 15-20 minutes or until golden brown.
Serving
- Remove from the oven and allow to cool before slicing and serving.
- Delight in every comforting bite.
Notes
Serve with a dollop of Greek yogurt and enjoy warm or chilled. This dessert can be meal prepped and stored for up to a week in the refrigerator.
