Filling Ingredients
  • 1/2 cup homemade chia seed strawberry jam Offers a fruity filling that is both sweet and tart.
  • 1 cup fresh raspberries Adds a burst of freshness and vibrant color.
Crumble Topping Ingredients
  • 1 cup old fashioned rolled oats Contributes texture and heartiness to the crumble.
  • 1/2 cup finely chopped walnuts Provides crunch and nutty flavor in the topping.
  • 1 pinch sea salt Helps to enhance overall flavors.
  • 1/2 teaspoon vanilla extract Boosts the aromatic notes in the dessert.
  • 1/4 cup another 1/4 cup maple syrup or raw honey Adds additional sweetness to the topping.
  • 2 tablespoons melted coconut oil For moisture in the crumble topping.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Line an 8x11 inch baking pan with parchment paper.
  3. In a mixing bowl, combine all shortbread crust ingredients thoroughly.
  4. If needed, add a few drops of almond milk or water to adjust the consistency.
  5. Firmly press the crust mixture into the bottom of your prepared pan.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Allow to cool for about 5 minutes.
  8. Evenly spread your chia seed strawberry jam on top of the cooled crust.
Cooking
  1. In another mixing bowl, combine all crumb topping ingredients using a silicone spatula.
  2. Evenly distribute the crumb mixture over the strawberry jam filling.
  3. Add fresh raspberries on top as desired.
  4. Place the pan in the oven and bake for 15-20 minutes or until golden brown.
Serving
  1. Remove from the oven and allow to cool before slicing and serving.
  2. Delight in every comforting bite.

Notes

Serve with a dollop of Greek yogurt and enjoy warm or chilled. This dessert can be meal prepped and stored for up to a week in the refrigerator.
