Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. In a medium saucepan over medium heat, melt half of the butter.
  3. Add the minced onion and diced celery to the saucepan.
  4. Stir frequently for 5-6 minutes until vegetables are softened.
  5. Mix in the minced garlic and cook for 1 more minute.
  6. Add the remaining butter, chicken broth, and water to the saucepan.
  7. Allow the mixture to come to a boil.
  8. Stir in the stuffing mix and reduce heat to low.
  9. Mix until well combined and remove from heat.
  10. Let cool for 5 minutes, then stir in whisked eggs.
Meat Mixture
  1. Transfer the stuffing mixture to a large bowl.
  2. Season ground beef with salt and pepper, then add to the bowl.
  3. Stir in ground pork and mustard until just combined.
  4. Shape the mixture into a loaf and place it into a greased loaf pan.
Baking
  1. Bake uncovered for 40 minutes.
  2. In a small bowl, combine glaze ingredients.
  3. Brush half of the glaze on top of the meatloaf.
  4. Continue baking for an additional 20 minutes.
  5. Remove meatloaf, brush with the remaining glaze, and bake for 10-15 more minutes.
Finishing Touches
  1. Ensure the meatloaf reaches 155°F before removing.
  2. Let the meatloaf rest for 15 minutes before slicing and serving.

Notes

For enhanced flavor, use fresh herbs like thyme or parsley when mixing the meat. Consider adding sautéed mushrooms for extra texture. Do not overmix the meat mixture to keep it tender. Serve with mashed potatoes or steamed vegetables for a complete meal.
