Cooking Steps
- In a Dutch oven, heat the olive oil over medium-high heat.
- Add the ground beef and diced onion; cook until browned and softened, about 6 to 7 minutes.
- If necessary, drain excess fat from the pot.
- Add the red, green, and orange bell peppers, Italian seasoning, cumin, garlic powder, salt, and pepper; cook for 1 minute while stirring constantly.
- Stir in the rice, beef broth, fire-roasted diced tomatoes, and diced tomatoes with green chiles.
- Increase the heat to high until boiling.
- Once boiling, reduce heat to low, cover, and simmer for 25 minutes, or until the rice is tender.
- If the soup is too thick, thin it with water to your desired consistency.
- Stir in ½ cup of cheese, taste, and adjust seasoning if needed.
- Serve hot, topped with the remaining cheese and chopped fresh cilantro or parsley.
Notes
Serve with garlic bread for a complete meal. This soup is perfect for meal prep and can be easily stored for leftovers.
