Preparation
- Preheat the oven to 375°F.
- In a large skillet over medium heat, cook the ground beef until browned.
- Add diced onion, minced garlic, Kosher salt, ground black pepper, smoked paprika, and thyme. Cook until the beef is browned.
Cooking
- Stir in diced tomatoes, beef broth, and red pepper paste. Bring to a boil, then reduce heat and simmer for 8 minutes.
- Transfer half of the meat mixture into a baking dish.
- Layer with cooked brown rice, diced bell peppers, and half of the cheddar cheese. Repeat the layers.
- Bake in the oven for 30 to 40 minutes, until bubbly and tops start to brown.
Serve
- Optionally, garnish with chopped parsley before serving.
Notes
Use lean ground beef or substitute with turkey for a lighter meal. Don't skip the simmering step to deepen flavors. For spice lovers, add chopped jalapeños.
