  • 2 cups cooked brown rice Acts as a filler.
  • 2 bell peppers, diced Adds crunch and sweetness.
  • ¼ cup freshly chopped parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, cook the ground beef until browned.
  3. Add diced onion, minced garlic, Kosher salt, ground black pepper, smoked paprika, and thyme. Cook until the beef is browned.
Cooking
  1. Stir in diced tomatoes, beef broth, and red pepper paste. Bring to a boil, then reduce heat and simmer for 8 minutes.
  2. Transfer half of the meat mixture into a baking dish.
  3. Layer with cooked brown rice, diced bell peppers, and half of the cheddar cheese. Repeat the layers.
  4. Bake in the oven for 30 to 40 minutes, until bubbly and tops start to brown.
Serve
  1. Optionally, garnish with chopped parsley before serving.

Notes

Use lean ground beef or substitute with turkey for a lighter meal. Don't skip the simmering step to deepen flavors. For spice lovers, add chopped jalapeños.
