Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. In a large oven-safe braiser, heat olive oil over medium heat.
  3. Sauté the onion and bell peppers for 3-5 minutes until softened.
  4. Stir in the ground beef and garlic, cooking for an additional 3 minutes.
  5. Add tomato paste, Italian seasoning, paprika, cayenne, salt and pepper, cooking for 1-2 minutes.
  6. Mix in the diced tomatoes thoroughly.
  7. Add beef broth, rice, sour cream, Worcestershire sauce, and 1 cup of cheese, mixing well.
Baking
  1. Cover the casserole and bake for about 30 minutes.
  2. Remove cover, sprinkle with remaining cheese, and broil until golden brown.
  3. Let the casserole rest for 5 minutes before serving. Garnish with parsley.

Notes

For a spicier version, add more cayenne or diced jalapeños. You can also use ground turkey or chicken for a leaner option.
