Preparation
- Preheat the oven to 350°F.
- In a large oven-safe braiser, heat olive oil over medium heat.
- Sauté the onion and bell peppers for 3-5 minutes until softened.
- Stir in the ground beef and garlic, cooking for an additional 3 minutes.
- Add tomato paste, Italian seasoning, paprika, cayenne, salt and pepper, cooking for 1-2 minutes.
- Mix in the diced tomatoes thoroughly.
- Add beef broth, rice, sour cream, Worcestershire sauce, and 1 cup of cheese, mixing well.
Baking
- Cover the casserole and bake for about 30 minutes.
- Remove cover, sprinkle with remaining cheese, and broil until golden brown.
- Let the casserole rest for 5 minutes before serving. Garnish with parsley.
Notes
For a spicier version, add more cayenne or diced jalapeños. You can also use ground turkey or chicken for a leaner option.
