  • 1 tbsp maple syrup Adds sweetness to the custard.
  • 1 tsp ground cinnamon Provides warmth and spice.
Main Ingredients
  • 8 slices thick sandwich bread Ideal for holding the filling.
  • 2 tbsp vegan butter or neutral oil Used for frying.
Toppings

Method
 

Preparation
  1. In a small bowl, mix the vegan cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  2. Add sliced strawberries to a bowl and stir in 1 tablespoon of sugar. Let stand for 10 minutes to soften and release juices.
  3. In a shallow bowl, whisk together the vegan milk, ground flax meal, maple syrup, vanilla extract, and cinnamon. Let rest for 2–3 minutes.
Assembly and Cooking
  1. Lay out the bread slices. Spread the cream cheese over 3 slices, leaving a ⅓ inch border. Add sliced strawberry evenly and top with remaining bread slices.
  2. Quickly dip each sandwich into the custard on both sides; do not soak.
  3. Heat a large skillet or griddle over medium heat. Add the vegan butter or oil.
  4. Cook the stuffed French toast for 3–5 minutes per side, until golden brown and warmed through.
  5. Serve warm with maple syrup and fresh berries.

Notes

Consider using brioche or sourdough for the bread. Customize fillings with nuts or other fruits for variety. Serve immediately for the best texture.
