Preparation
- Preheat your air fryer to 375°F (190°C).
- Prepare the bell peppers by slicing the tops off and removing the seeds.
- In a skillet, sauté diced onions until translucent.
- Add ground turkey or beef and cook until browned.
- Stir in cooked brown rice or quinoa and tomato sauce, followed by spices. Mix well and cook for a few minutes longer.
- Stuff each bell pepper with the filling mix, pressing down firmly.
- Place stuffed peppers upright in the air fryer basket, ensuring they are not touching.
- Cook for 12-15 minutes, or until the peppers are tender and the filling is heated through.
- Optionally, sprinkle cheese on top during the last 2 minutes of cooking.
Notes
Can be customized for gluten-free or dairy-free diets; meal-prep friendly. Wrap peppers in foil for a softer texture if preferred. Avoid overcooking to prevent mushiness.
