Preparation
  1. Brew a cup of strong coffee and allow it to cool.
  2. In a large mixing bowl, combine mascarpone cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy.
  3. Slice fresh strawberries, setting aside some whole for garnish.
Assembly
  1. Dip each ladyfinger briefly into the cooled coffee, ensuring they are soaked but not soggy.
  2. In a rectangular dish, layer half of the soaked ladyfingers on the bottom.
  3. Spread half of the mascarpone mixture over the ladyfingers, followed by a layer of sliced strawberries.
  4. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberries.
Chilling
  1. Chill in the refrigerator for at least 4 hours or overnight for best flavor.
Serving
  1. Before serving, sprinkle cocoa powder on top and garnish with whole strawberries.
