Preparation
- Wash and slice the fresh strawberries. Toss them in a bowl with granulated sugar and let them sit for about 15 minutes to release their juices.
- Bake your favorite shortcake recipe or use store-bought shortcake for convenience. Allow it to cool completely before crumbling it into bite-sized pieces.
- In a mixing bowl, whip cream until soft peaks form. Add vanilla extract and continue whipping until stiff peaks form.
Assembly
- In a jar, layer the crumbled shortcake, a layer of strawberries (with juices), and then a generous dollop of whipped cream.
- Repeat the layers until the jar is nearly full, finishing with whipped cream on top.
Chill and Serve
- Cover the jars with lids and chill them in the refrigerator for at least 30 minutes. Serve cold, optionally garnished with fresh mint leaves.
Notes
For a flavor boost, try macerating strawberries overnight with sugar for a richer flavor. You can prepare these jars a day in advance. Store leftovers in the refrigerator for up to 2 days.
