Preparation

  3. In another bowl, whisk the eggs, milk, and vegetable oil until smooth.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Fold in the chopped strawberries carefully, being mindful not to overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow them to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For best results, avoid overmixing the batter. You can prep the batter the night before to save time in the morning.
