Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together the rolled oats, flour, baking powder, and cinnamon.
- In another bowl, combine the Greek yogurt, honey or maple syrup, and egg.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Gently fold in the chopped strawberries.
- Divide the batter evenly among the muffin cups, filling about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let them cool for a few minutes before transferring to a wire rack.
Notes
For best results, avoid overmixing the batter and measure flour carefully. Customize with chocolate chips or nuts for added flavor.
