Preparation
- Preheat your oven to 350°F (175°C).
- Wash and slice the fresh strawberries. Place them in a mixing bowl and toss with sugar. Let it sit for about 10 minutes to draw out the juices.
- In another bowl, combine the flour, baking powder, and salt. Mix until well combined.
- Add cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
- Pour in the buttermilk and stir gently until the dough comes together.
Baking
- In a baking dish, pour the macerated strawberries along with their juices, spreading them out evenly.
- Drop spoonfuls of biscuit dough over the strawberries, covering as much as possible.
- Bake in the preheated oven for 30–35 minutes, or until the biscuits are golden brown and the berries are bubbly.
- Let it cool for a few minutes before serving.
Notes
For best results, use fresh strawberries and make sure your butter is very cold. Consider adding a splash of vanilla extract for extra flavor.
