  • 2 pieces Grilled Chicken Cooked until no longer pink in the center
  • 2 cups Fresh Strawberries Quartered
  • 4 cups Mixed Greens Can substitute with spinach or arugula
  • 1 cup Feta Cheese Crumbled
  • 1/2 cup Almonds Sliced or chopped
  • 1/4 cup Balsamic Vinaigrette Store-bought or homemade

Method
 

Preparation
  1. Grill or cook the chicken until it’s no longer pink in the center, about 6-7 minutes per side. Let it rest.
  2. While the chicken rests, prepare the mixed greens in a large bowl.
  3. Slice the grilled chicken into strips and add it to the bowl with greens.
  4. Quarter the fresh strawberries and add them in, along with crumbled feta cheese and sliced almonds.
  5. Drizzle balsamic vinaigrette over the top and toss gently to combine all ingredients.
  6. Serve immediately or chill in the fridge for an hour for the flavors to meld.

Notes

Marinate the chicken in a simple mix of olive oil, salt, and pepper for added flavor. Use seasonal strawberries for the best sweetness and freshness. Toast the almonds lightly for extra flavor and crunch. Mix in some avocado for a creamier texture. Prep individual servings for easy grab-and-go lunches during the week.
