Preparation
- Preheat oven to 350°F and lightly grease and line an 8x8” baking pan with parchment paper.
- In a mixing bowl, whisk together flour and cocoa powder. Set aside.
- In a second large mixing bowl, whisk together the eggs and coconut sugar until foamy.
- In a microwave-safe bowl, add butter and dark chocolate. Microwave in increments until melted and whisk together.
Mixing & Baking
- Pour the melted chocolate and maple syrup into the egg mixture and whisk. Add vanilla and whisk until combined.
- Pour the batter into the prepared baking dish and spread into an even layer.
- Dollop the strawberry preserves over the top and swirl gently with a knife.
- Top with strawberry slices and extra chocolate chunks, pressing them into the batter.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow brownies to cool before slicing.
Notes
