Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a medium bowl, wash and slice the strawberries. Set them aside.
  3. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk together the oil, eggs, and vanilla extract until well combined.
  5. Slowly add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
  6. Gently fold in the sliced strawberries, distributing them evenly throughout the batter.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, use ripe strawberries. Add a teaspoon of lemon zest for extra flavor. This bread can also be made gluten-free by substituting flour.
