Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a medium bowl, wash and slice the strawberries. Set them aside.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the oil, eggs, and vanilla extract until well combined.
- Slowly add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
- Gently fold in the sliced strawberries, distributing them evenly throughout the batter.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, use ripe strawberries. Add a teaspoon of lemon zest for extra flavor. This bread can also be made gluten-free by substituting flour.
