Method
 

Preparation
  1. Boil a large pot of salted water and cook the cavatappi pasta al dente according to package instructions.
  2. When there is about a minute left of cooking time, add the broccoli florets to the boiling pasta water.
  3. Once the pasta is tender and the broccoli is bright green, drain in a colander and set aside.
Sauce Preparation
  1. In the same pot, melt butter over medium heat and then add the flour. Cook for 2-3 minutes, stirring frequently.
  2. Slowly stream in the milk while whisking continuously until no lumps remain.
  3. Add in Dijon mustard, garlic powder, and season with salt and pepper.
  4. Bring the sauce to a low simmer and cook over medium/low heat for 8-9 minutes, whisking frequently until thickened.
  5. Turn off the heat, add shredded cheeses, and stir until melted.
Combine and Serve
  1. Taste the sauce and adjust salt and pepper as needed.
  2. Stir in the cooked pasta and broccoli.
  3. Serve hot and enjoy your warm, creamy bowl of goodness!

Notes

For a crispy finish, you can top with breadcrumbs and broil for a few minutes. Use freshly grated cheese for optimal melting. Experiment with herbs or spices for added flavor.
