Preparation
- Preheat the oven to 350°F.
- Pour boiling water over dates in a medium bowl and let sit for 20 minutes.
- Blend soaked dates with the water until smooth.
Cooking
- In a stand mixer, cream together butter, dark brown sugar, vanilla, and salt.
- Incorporate eggs into the mixture, mixing well after each addition.
- In another bowl, whisk together flour, malted milk powder, and baking powder.
- Mix half of the flour mixture into the butter mixture, then add heavy cream and remaining flour mixture.
- Stir in the date puree until fully combined.
- Pour the batter into a prepared baking pan and bake for 37-40 minutes until a toothpick comes out clean.
Serving
- For the toffee sauce, melt butter in a saucepan, then stir in dark brown sugar, heavy cream, and salt.
- Cook until thickened, then mix in vanilla extract.
- Brush warm syrup over the cooled cake.
- Optionally reheat in the oven before serving, and serve warm with whipped cream or ice cream if desired.
