Preparation
- Prepare the sauce by whisking together the soy sauce, water, sriracha, honey, and cornstarch in a small bowl. Set aside.
Cooking
- Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until no longer raw, about 5 minutes. Remove to a plate and set aside.
- Add the remaining oil to the skillet, then add the broccoli, peppers, red onions, and snap peas. Cook until tender-crisp, about 3 minutes.
- Add garlic and ginger, cooking and stirring for 30 seconds.
Serving
- Reduce the heat to medium, add the shrimp back to the skillet, stir the sauce, and then add it to the skillet.
- Continue to cook, stirring, until the sauce thickens and coats the shrimp and vegetables, about 2 more minutes.
- Off heat, drizzle with sesame oil and sprinkle sesame seeds. Serve immediately.
Notes
For extra crunch, consider adding cashews or peanuts. Adjust sriracha to your spice preference.
