Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced sweet onion and sauté for 5 minutes until translucent.
  3. In a medium bowl, mash the black beans with a fork until slightly smooth.
Cooking
  1. Stir in minced garlic and shredded chicken to the skillet with the onions.
  2. Add the mashed beans and taco seasoning, stirring to combine completely.
  3. Sauté for 3 minutes to heat through, then add Greek yogurt and cilantro, stirring to coat.
  4. Set the filling mixture aside once heated through and well-mixed.
Serving
  1. In a separate pan over medium heat, warm each tortilla for 1 to 2 minutes until golden and crispy.
  2. Sprinkle shredded cheese onto each tortilla, followed by spoonfuls of the filling mixture.
  3. Optionally add cherry tomatoes and jalapeños if desired, then fold the tortillas and place on plates.
  4. Continue with remaining tortillas and filling, garnishing with sliced lettuce if desired.
