Preparation
- Preheat the oven to 375°F and line a baking sheet with aluminum foil.
- Place the skin-on salmon fillets skin-side down on the foil, raising the edges about 2 inches.
- Nestle thin rounds of orange underneath the salmon for added flavor.
- In a microwave-safe measuring cup, melt the unsalted butter.
- Stir in honey and orange juice, then pour about two-thirds of the mixture over the salmon; reserve the rest.
- Sprinkle the salmon with chili seasoning mix, salt, and black pepper to taste.
- Tightly seal the aluminum foil around the salmon to keep it moist. Let it marinate for 10-15 minutes if possible.
Cooking
- Place the baking sheet in the oven and bake for about 15 minutes.
- Remove from oven and carefully open the foil to expose the salmon, keeping the edges raised.
- Switch the oven setting to high broil and spoon the reserved buttery mixture over the salmon if desired.
- Broil for 5-10 minutes until golden, watching closely to prevent burning.
- Garnish with fresh parsley if using, and serve immediately.
