Preparation
- Preheat the oven to 400°F (200°C).
- Wash and cut the potatoes into bite-sized pieces.
- In a bowl, whisk together lemon juice, Dijon mustard, olive oil, and minced garlic until smooth.
- Toss the potatoes in half of the lemon Dijon mixture to coat them well.
- Spread the potatoes evenly on one side of the sheet pan.
Cooking
- Roast the potatoes in the preheated oven for 15 minutes.
- While potatoes are roasting, coat the salmon fillets with the remaining lemon Dijon mixture.
- After 15 minutes, remove the sheet pan and push the potatoes to one side.
- Add the salmon fillets to the empty side of the pan.
- Return to the oven and roast for an additional 12-15 minutes or until the salmon flakes easily with a fork.
- Garnish with fresh herbs before serving.
Notes
For extra flavor, let the salmon marinate in the lemon Dijon mixture for at least 30 minutes before cooking. Use a mixture of sweet and Yukon potatoes for a delightful color contrast and varied flavor.
