Preparation
  1. Preheat the oven to 400°F and prepare a large rimmed baking sheet with foil and a light coat of nonstick spray.
  2. In a large bowl, combine the diced sweet potatoes with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper, and toss to coat evenly.
  3. Spread the sweet potatoes in a single layer on the baking sheet and bake for 10 minutes.
Cooking
  1. In the same bowl, add the bite-sized chicken pieces, broccoli florets, bell pepper pieces, sliced zucchini, and yellow squash.
  2. Drizzle with the remaining 2 tablespoons of olive oil, then add the lemon zest, lemon juice, Italian seasoning, garlic powder, onion powder, and the remaining salt and pepper. Toss well to combine.
  3. Pour the chicken and vegetable mixture onto the baking sheet with the sweet potatoes, spreading it out evenly.
  4. Cook for an additional 15-20 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are tender.
  5. Remove from the oven, sprinkle with Parmesan cheese, and serve hot.
