Notes

For quicker prep, buy pre-peeled and cut carrots. Substitute fresh ginger with ground ginger if necessary, but use less as it is more potent. For added protein, toss in some shredded rotisserie chicken or tofu. Make your ribbons thinner for a more delicate salad.
