Preparation
  1. In a large skillet, over medium heat, add a bit of oil.
  2. Once hot, sauté chopped onion and minced garlic until soft, about 3-5 minutes.
  3. If using ground beef or sausage, add it to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.
  4. Reduce the heat to low and stir in the cream cheese, mixing until melted and smooth.
  5. Pour in the Rotel tomatoes and stir well to combine. Let it simmer for 5 minutes to meld the flavors.
  6. Stir in shredded cheese until it’s melted, about 2-3 minutes. Season with salt and pepper to taste.
  7. Transfer to a serving dish and enjoy with your favorite dippers!

Notes

This dip can be prepared a day in advance and stored in the refrigerator. Reheat in the microwave or on the stovetop before serving.
