- In a large skillet, over medium heat, add a bit of oil.
- Once hot, sauté chopped onion and minced garlic until soft, about 3-5 minutes.
- If using ground beef or sausage, add it to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.
- Reduce the heat to low and stir in the cream cheese, mixing until melted and smooth.
- Pour in the Rotel tomatoes and stir well to combine. Let it simmer for 5 minutes to meld the flavors.
- Stir in shredded cheese until it’s melted, about 2-3 minutes. Season with salt and pepper to taste.
- Transfer to a serving dish and enjoy with your favorite dippers!
Notes
This dip can be prepared a day in advance and stored in the refrigerator. Reheat in the microwave or on the stovetop before serving.
