Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potatoes with olive oil, salt, and spices on a roasting pan.
  4. Roast the sweet potatoes for about 25-30 minutes until crispy, tossing halfway.
Assembly
  1. Meanwhile, prepare the mixed greens and chickpeas in a large bowl.
  2. Slice the red onion thinly and add it to the bowl.
  3. Once the sweet potatoes are done, let them cool for a few minutes.
  4. Add the roasted sweet potatoes to the bowl along with lime juice.
  5. Toss everything together gently until combined.
  6. Serve immediately or store in the refrigerator for meal prep.

Notes

For an extra layer of flavor, roast the chickpeas alongside the sweet potatoes. Mix in your favorite herbs for an aromatic boost.
