Cooking
- Roast the peppers for 40 minutes, flipping halfway through to ensure even cooking.
- Allow the roasted peppers to cool; this makes them easier to handle.
- Once cool, peel away the charred outer skin for a smooth texture.
Blending
- Add all the ingredients to a food processor, including the garbanzo beans, olive oil, tahini, lemon juice, garlic, salt, paprika, and black pepper.
- Process everything together until creamy and well combined.
Serving
- Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with red pepper flakes before enjoying.
Notes
This hummus can be made ahead of time and stored in the fridge for up to a week. It also freezes well for 2-3 months.
