Preparation
- Preheat the oven to 400°F (200°C) for even roasting.
- Slice the stem off the pumpkin and halve it lengthwise.
- Scoop out the seeds and stringy insides to prepare the pumpkin for roasting.
- Slice the halved pumpkin into 3/4 inch thick wedges for uniform cooking.
- Place foil on a sheet pan and coat it with cooking spray for easy cleanup.
Cooking
- In a small bowl, combine olive oil, maple syrup, brown sugar, cinnamon, salt, and pepper.
- Pour the oil mixture over the pumpkin wedges, making sure each piece is well coated.
- Arrange the pumpkin on the prepared sheet pan in a single layer.
- Roast in the oven for about 20 minutes or until the pumpkin is tender and starting to brown.
