  • 4 pieces Fresh Peaches Sweet and juicy for roasting.
  • 1/2 cup Pistachios Adds crunch and nutty flavor.
  • 1 cup Ricotta Cheese Creamy base of the salad.
  • 2 tablespoons Honey Natural sweetness for the ricotta.
  • 4 cups Mixed Greens Fresh base for the salad.
  • 2 tablespoons Olive Oil Drizzle for added richness.
  • 1 teaspoon Salt To season the salad.
  • 1 teaspoon Pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the peaches in half, remove the pits, and place them cut side up on a baking sheet.
  3. Drizzle with olive oil and a sprinkle of salt.
  4. Roast in the preheated oven for 15-20 minutes, until they are slightly caramelized and tender.
Creamy Honey Ricotta
  1. While peaches are roasting, prepare the ricotta. In a bowl, mix ricotta cheese with honey until well blended.
Assembly
  1. Once the peaches are done, let them cool slightly.
  2. In a serving bowl, arrange the mixed greens, top with the roasted peaches, pistachios, and dollops of honey ricotta.
  3. Drizzle with more olive oil and sprinkle with salt and pepper to taste.
  4. Serve immediately and enjoy!
