Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a large baking tray with parchment paper.
  2. Place the cauliflower on a cutting board and slice it into 1/2 inch discs.
  3. Brush or spritz both sides of the cauliflower discs with avocado oil.
  4. Lay the seasoned cauliflower flat on the lined baking tray and sprinkle with sea salt and garlic powder.
Cooking
  1. Bake in the preheated oven for about 10 minutes on each side; a total of 20 minutes, flipping once for desired doneness.
  2. Remove from the oven and set to broil. Place a dollop of pizza sauce on each cauliflower bite.
  3. Sprinkle shredded mozzarella cheese and add a piece of nitrate-free pepperoni on top.
  4. Return the tray to the oven and broil for 1-2 minutes until the cheese is bubbly and golden.
Finishing
  1. Remove from the oven and sprinkle with fresh or dried basil before serving.

Notes

For best results, ensure the cauliflower discs are spaced evenly on the tray and watch closely while broiling to prevent over-browning. Store leftovers in an airtight container for up to 3 days.
